I noticed a tendency to load more and more VPS to the physical server in order to offer lower prices. How to identify how many VPSs of other customers are loaded to the physical server ?

Host might not provide you the exact information. Best thing to do is to check the load on the server frequently and the applications which consume those resources. You can also check your website stats from your control panel to check if the load on the server is actually due to the traffic on your website or are other VM's hosted on the same node using your resources.
